1 cup pitted dates
1 cup walnuts
Juice of 1 orange
1/4 cup boiled water
2 tbsps black chia seeds
1/2 tsp cinnamon
1/4 tsp cardamon
1 tbsp of melted ghee
Put pitted dates in a small deep bowl. Add orange juice and boiled water. Stir and cover. Leave overnight or at least for several hours, lifting and turning the dates and liquid occasionally to soften and macerate the fruit. Now tip in the chia seeds. These absorb a considerable amount of the liquid.
Place walnuts on a baking sheet and put in a oven heated to 180 degrees for 7-10 minutes. This will bring out the flavour of the nuts but they will not be completely toasted. Place walnuts in a food processor and grind to a meal. Add dates, liquid, spices and ghee. Pulse and blend until the mixture is smooth and even. Remove and place in fridge to harden.
Drop walnut sized balls into dessicated coconut. Put some coconut in the palm of your hand and roll each ball. Place in a sealed container and store in the fridge.
Variation: Add 2-4 tbsps Dutch cocoa powder to the mixture. You can roll then in cocoa or use coconut, as you please. To save time make a double batch of the mixture, remove half from the blender, then add the cocoa to the remaining mixture.
